So Fresh and Delicious
Last night I tried my hand at cooking up some stuffed portabellos.. While they didn’t come out looking the best, they were quite delicious! With as few ingredients as there are in this recipe it can easily be changed into a 100% vegan meal.
The ingredients amounts are give or take
.

2 Large Portabellos
1 whole onion
1 whole red bell pepper

For the past 2 years some friends and I have set a tradition of attending A-Kon then yearly Anime Convention held in Dallas Texas, but this year we wanted something different. So we decided that we’re going to fly to LA and see the grand sights of Anime Expo the largest Anime Convention in the nation. We arrived in LA 2 days before the opening day for some sight seeing and non-expo vacation activities, which included amazing food, The La Brea Tar Pits, and Hollywood.

Black Sea Cucumber
Our first stop took us to Little Tokyo for some authentic Japanese Sushi at Sushi Gen. There I was able to get my chop sticks on Black Sea Cucumber, and man was it goood! The texture was similar to octopus but a little more chewy. They also it swimming in a bitter sweet type of sauce that enhanced the flavor beyond belief. I also had a Shrimp Tempura plate that came with a plate of Maguro: Tuna, Toro: Fatty Tuna, and Mamachi: Yellowtail Sashimi. I had my doubts due to an experience with Sashimi I had at a local place here recently. However, the fish tasted as though it had just been pulled out of the net and prepared that instant. I think this is the first time I had actually been able to taste true flavor of the different slices of Sashimi. Daniela had a Sushi Bowl that was basically a treasure chest of delicious. The bowl was made up of Octopus, Shrimp, Spicy Tuna, Ahi Tuna, Tomago, Eel, Smelt Roe, and Salmon on a bed of rice. The meals were so amazing we walked out smiling out of sheer satisfaction. I think that meal alone has ruined Sushi in San Antonio for me forever. I can’t explain how fresh and tasteful everything was, it was hands down the best Sushi experience I have ever had.

I’ve decided to toss up a gallery really quick to show some of my friends and family how I spent my Easter this year (which Daniela and I used as a much needed mini stay-cation).We did some yard work and gardening that we have been meaning to do for long awhile. On a side note procrastination = a dead Ivy. Once that was done I was finally able to break out the BBQ pit I received last X-mas from my brother and his wife (www.safun.com) for a test run! All in all it was an amazing day filled with good times, people, and food.
On a side note, today I entered in my office’s “Biggest Loser” style competition and I’m in it to win it! I have been working to lose some weight that I gained from being lazy and inactive and now I’m even more motivated to step it up. Right now Im holding at about 242.5lbs and my goal is to get to the average weight for a 6″4′ male which is about 190lbs. Ill be tracking my progress here for every weigh in (haha, I figure I need to use this blog for something huh?). Any tips and words of encouragement are greatly appreciated!

Just here hanging out at the casa checking out how Flock interacts with my WP install. It seems like it will be easier to add pictures with this app.
Hmm, maybe it won’t as you can see this is a very small picture of my very tastey dinner from Los Cucos.
